The County is seeking a qualified contractor to operate a full‑service kitchen for the Camden County Juvenile Detention Facility, providing meals for detainees and staff while meeting strict nutritional, security, and regulatory standards. The contractor must staff the kitchen 7 days a week, manage menu development (including medical‑diet and emergency menus), handle surplus‑commodity usage, and comply with extensive reporting, background‑check, and insurance requirements.
• Provide ~180 resident meals + 30 staff meals daily, with optional second‑portion dinners.
• Deliver a four‑week rotating menu plus special holiday, sack‑lunch, medical‑diet, kosher, and Ramadan options, all certified by a registered dietitian.
• Maintain 24‑hour on‑call management, background‑checked staff, and comply with NJ nutrition standards, environmental disposables ban, and all applicable federal/state statutes.
