Description
The Defense Logistics Agency is seeking a concessionaire to operate two on‑site cafeterias and a mobile food‑truck at the Defense Distribution Depot San Joaquin in Tracy, California. The contractor will provide all labor, equipment, food, and related services, paying the NAFI a monthly concession fee or a percentage of gross sales (whichever is greater). The contract is a best‑value award with a two‑year base period and up to eight one‑year options, potentially spanning ten years.
• Operate two cafeterias (≈118 and ≈61 seats) and a mobile food‑truck on a set schedule, Monday‑Friday, breakfast & lunch.
• Provide all staff, obtain ServSafe and HACCP certifications, meet extensive food‑safety, security, and reporting requirements (monthly financial statements, quarterly reviews, annual certifications).
• Financial model is revenue‑sharing: propose a fixed monthly fee and/or commission on gross sales; historical gross sales average about $40,000 per month, giving a rough revenue base for pricing.
